Spaghetti Squash Burrito Bowls

Wash spaghetti squash outside, poke a few holes with a knife and put in microwave for 1-2 min. Cut off head, cut in half and scrape out insides   

  
Put olive oil, salt and pepper and paprika on the rim of spaghetti squash. Turn face down into aluminum-lined tray, and cook for 30-45 mins at 375. 

Once cooked, scrape insides with fork, and then begin layering the ingredients!

Corn

Peppers

Spaghetti squash 

Green onions 

Cheddar cheese, grated. 
Put them back in oven for 5 more mins, or broil for 2 mins, for the cheese to melt. 

   

No plates needed! (Mama R and Allen, this note was directed at you, LOL!). We made guac on the side and used it as we pleased on top of our individual bowls. We also added some salsa. 

So fresh and delish!
